
Lark has quietly become one of the best restaurants in the country. It is a restaurant that is more comfortable in its skin than nearly any I have been to. Chef/Owner John Sundstrom is a master at coaxing igredients to give their truest flavors, and the result is often both surprising and surprisingly comfortable: as if the we knew all along that the ingredients were capable of this, but wondered why they never lived up to their full potential. Before opening Lark with his wife JM Enos and his business Partner Kelly Ronan (who runs the front of the house and the wine program beautifully) John worked in some of the best kitchens in the country. in 2001, while he was the executive Chef at Earth and Ocean, John was named one of Food and Wine's Best New Chefs, and in 2007 he received a James Beard Award for "Best Chef, Northwest".
